- 70g sugar
- 10g salt
- 20g fresh yeast
- 250ml lukewarm milk
- 4 eggs
- 150g soft butter
- 500ml milk (for pastry cream)
- 100g sugar (for pastry cream)
- 4 egg yolks (for pastry cream)
- 40g cornstarch (for pastry cream)
- 1 vanilla bean (for pastry cream)
- 200g dark chocolate chips
Instructions
- Combine flour, sugar, and salt in a bowl. Dissolve yeast in lukewarm milk and add to dry ingredients.
- Mix in eggs one at a time until smooth. Add soft butter and knead until the dough is elastic.
- Cover with plastic wrap and let rise in a warm place for about an hour.
- For the pastry cream, heat milk with split vanilla bean. In another bowl, whisk egg yolks with sugar until pale; mix in cornstarch.
- Gradually incorporate hot milk into egg mixture, then return to the stove to thicken.
- Once dough has risen, punch down and roll out into a rectangle. Spread pastry cream on top, sprinkle with chocolate chips, and roll into a log.
- Place in a greased brioche mold and let rise again for 30 minutes. Preheat oven to 180°C (350°F).
