  • 2 tablespoons of whole grain mustard
  • 150 ml of light cream
  • Juice of one lemon
  • 1 teaspoon of lemon zest (optional)
  • 1 tablespoon of olive oil
  • Salt and pepper to taste
  • A few sprigs of fresh dill for garnish

Instructions

  1. Preheat your oven to 180°C.
  2. Lightly oil a baking dish with a bit of olive oil or line it with parchment paper to prevent the fish from sticking.
  3. In a bowl, mix the whole grain mustard, light cream, lemon juice, lemon zest, olive oil, salt, and pepper. Stir well until you have a smooth sauce.
  4. Place the cod fillets in the prepared dish, ensuring there is space between each fillet for even cooking. Generously coat each fillet with the mustard and lemon sauce.
  5. Bake the dish for about 20 minutes. The cod is done when the flesh is opaque and flakes easily with a fork. Keep an eye on the sauce, which should be lightly golden.
