  • 4 medium zucchinis
  • 500 g ground meat (beef or mixed)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 100 g cooked rice
  • 100 g grated Parmesan cheese
  • 400 ml tomato sauce
  • Italian herbs (basil, oregano)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Cut the tops off the zucchinis and scoop out the insides with a melon baller.
  3. In a bowl, mix together ground meat, onion, garlic, cooked rice, Parmesan cheese, scooped zucchini flesh, salt, pepper, and herbs.
  4. Stuff each zucchini with the prepared mixture.
  5. Place stuffed zucchinis in a baking dish and pour tomato sauce over them.
  6. Bake for about 30 minutes until zucchinis are tender and tops are golden.
