Instructions

  1. In a large skillet, heat the coconut oil over medium heat. Once melted, add the chopped onion. Sauté for about 5 minutes until it becomes translucent.
  2. Add the minced garlic and grated ginger. Cook for another 1 to 2 minutes, stirring frequently to prevent the garlic from burning, which would give it a bitter taste.
  3. Stir in the spices: cumin, coriander, turmeric, garam masala, and chili powder. Cook for 1 minute while stirring to allow the spices to release their aromas.
  4. Pour the coconut milk into the skillet, stirring well to combine with the spices and aromatics. Bring to a gentle boil.
  5. Add the drained and rinsed chickpeas. Reduce the heat to medium-low and let simmer for about 10 minutes, stirring occasionally.
  6. Incorporate the chopped spinach, tomato paste, and soy sauce. Stir well and cook for another 5 minutes until the spinach is wilted.
  7. Season with salt and pepper to taste. For a touch of acidity, add the lime juice if desired.
