  • 50 g chocolate chips
  • 60 ml strong espresso

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. In a mixing bowl, combine flour, sugar, cocoa powder, baking powder, and salt. Whisk together.
  3. In another bowl, beat the eggs, then add milk, vegetable oil, and espresso. Mix until smooth.
  4. Pour the wet ingredients into the dry ingredients and gently fold until just combined. Stir in chopped chocolate and chocolate chips.
  5. Fill muffin cups two-thirds full with batter.
  6. Bake for about 20 minutes or until a toothpick inserted comes out clean.
  7. Allow muffins to cool slightly before transferring to a wire rack.
