- 60 ml strong espresso
Instructions
- Preheat your oven to 180°C (350°F).
- In a mixing bowl, combine flour, sugar, cocoa powder, baking powder, and salt. Whisk together.
- In another bowl, beat the eggs, then add milk, vegetable oil, and espresso. Mix until smooth.
- Pour the wet ingredients into the dry ingredients and gently fold until just combined. Stir in chopped chocolate and chocolate chips.
- Fill muffin cups two-thirds full with batter.
- Bake for about 20 minutes or until a toothpick inserted comes out clean.
- Allow muffins to cool slightly before transferring to a wire rack.
