  • 2 sheets gelatin
  • 1 vanilla bean
  • 300 g fresh or canned apricots
  • 50 g sugar (for the coulis)

  1. In a saucepan, combine heavy cream, sugar, and seeds from the vanilla bean. Heat gently until sugar dissolves.
  2. Soak gelatin sheets in cold water for about 10 minutes. Remove and stir into warm cream until fully dissolved.
  3. Pour the mixture into verrines halfway, let cool, then refrigerate for at least 4 hours until set.
  4. For the coulis, cook chopped apricots with sugar over medium heat for about 10 minutes until tender; blend until smooth.
  5. Once set, top panna cotta with apricot coulis and garnish with fresh fruit if desired.
