Instructions
- Prepare the Potatoes: Peel and cut the potatoes into 2cm cubes. Boil in salted water for about 10 minutes until tender but firm.
- Fry or Roast: For frying, heat olive oil in a deep pan to 180°C and fry the boiled potatoes until golden brown. For roasting, preheat the oven to 220°C, toss potatoes with oil on a baking tray, and roast for 25-30 minutes.
- Make the Sauce: In a skillet, heat olive oil and sauté minced garlic, red chili, and paprika for a minute. Add canned tomatoes; simmer for about 15 minutes until thickened. Blend if desired for smoothness, then stir in vinegar.
- Serve: Plate the crispy potatoes and generously drizzle with sauce.
