Ingredients

Scale
  • 400 g of chicken breast (cut into cubes)
  • 2 tbsp of cornstarch
  • 1 beaten egg
  • 4 tbsp of panko breadcrumbs
  • 3 tbsp of vegetable oil
  • 4 tbsp of mayonnaise
  • 2 tbsp of sriracha (adjust according to desired spiciness)
  • 2 tbsp of honey
  • 1 tbsp of lime juice
  • 250 g of cooked rice (jasmine or basmati)
  • 1 carrot (grated)
  • 1 cucumber (sliced)
  • 100 g of red cabbage (shredded)
  • fresh cilantro or parsley (a few leaves)

Instructions

  1. In a bowl, coat the chicken pieces with cornstarch. This step is essential for achieving a crispy texture. Ensure each piece is well covered.
  2. Dip the chicken cubes into the beaten egg. This will help the panko breadcrumbs adhere properly and create a golden coating during cooking.
  3. Roll the chicken pieces in the panko breadcrumbs. Make sure they are well coated to maximize crunchiness. Avoid pressing too hard, or they will become compact.
  4. Heat the vegetable oil in a pan over medium heat. The oil is hot enough when small bubbles form around a wooden spoon dipped in the oil.
  5. Add the breaded chicken pieces to the pan. Cook for 6 to 8 minutes, turning regularly to ensure they brown evenly. Monitor the cooking to prevent burning.
  6. In a separate bowl, mix the mayonnaise, sriracha, honey, and lime juice. Taste and adjust the spiciness according to your preference.
  7. In a large bowl, place the warm rice. This will help keep the dish warm when you add the vegetables and chicken.
  8. Add the fresh grated and sliced vegetables on top of the rice. The red cabbage, carrot, and cucumber will add color and texture to your Bang Bang Chicken Bowl.
  9. Place the crispy chicken on top and generously drizzle with Bang Bang sauce. Serve immediately to enjoy the warmth and crunch.

Nutrition

Keywords: Avoid overcrowding the pan when cooking the chicken to maintain oil temperature for crispiness. Use a non-stick pan for easier cooking and cleanup. For a more flavorful sauce, add some grated fresh ginger to your Bang Bang sauce mix.
