  • 250 g passata (pureed tomatoes)
  • 100 g peas
  • 2 bell peppers
  • 450 ml vegetable broth
  • 350 g chicken fillets
  • 2 teaspoons salt
  • 1 teaspoon sweet paprika
  • 1/2 teaspoon cayenne pepper or hot paprika
  • 2 cloves garlic
  • 1 onion

Instructions

  1. Prepare the ingredients: Peel and finely chop the onion and garlic. Set aside. Cut the bell peppers into small cubes. This step should take about 5 minutes.
  2. Cut the chicken: Cut the chicken fillets into pieces about 1 cm in size for even cooking. This step should take about 5 minutes.
  3. Heat the oil: In a large skillet or pot, heat some olive oil over medium heat. Wait for the oil to be hot but not smoking, about 2 minutes.
  4. Sauté the onion: Add the chopped onion and sauté for 2 to 3 minutes until it becomes translucent. Stir frequently to prevent burning.
  5. Add the chicken and bell peppers: Incorporate the chicken pieces and diced bell peppers. Sauté for 2 minutes until the chicken is lightly browned.
  6. Add the spices: Add the paprika, cayenne pepper, and garlic. Stir well and cook for about 1 minute to release the aromas.
  7. Incorporate the rice and peas: Add the Basmati rice and peas. Mix well to coat everything with the spices' flavors. This should take about 1 minute.
  8. Add the tomatoes and broth: Pour in the passata and vegetable broth. Mix well and bring to a boil.
  9. Cover and simmer: Once boiling, reduce the heat, cover, and let simmer for about 14 minutes. The rice should be tender and the liquid absorbed.
  10. Adjust seasoning: After 14 minutes, taste and adjust the salt if necessary. Let it rest for a few minutes before serving.
