  • 1 teaspoon of baking powder
  • 1 teaspoon of dried oregano
  • 100 g of unsalted butter (softened and cut into cubes, at room temperature)
  • 1 large egg (at room temperature)
  • 1 shallot (finely chopped)
  • 150 g of diced ham
  • 100 g of grated parmesan (preferably freshly grated)
  • A pinch of salt and pepper (to taste)

Instructions

  1. Preparation of the dough: In a large bowl, sift 150 g of flour with 1 teaspoon of baking powder. Add 1 teaspoon of dried oregano, a pinch of salt, and pepper. Mix well. This will create the base for your cookies.
  2. Incorporation of the butter: Add 100 g of diced unsalted butter. Rub everything together with your fingers until you achieve a crumbly texture, which is crucial for the lightness of the dough.
  3. Adding wet ingredients: In a small bowl, lightly beat 1 egg. Pour it into the flour and butter mixture, then mix until you obtain a smooth and soft dough. Avoid overworking the dough to keep it light.
  4. Incorporation of fillings: Add 1 finely chopped shallot, 150 g of diced ham, and 100 g of grated parmesan. Gently mix to incorporate these fillings without overworking the dough to preserve the texture.
  5. Shaping the cookies: Preheat your oven to 180°C (350°F). Take portions of dough the size of a large walnut, roll them into balls, and flatten them slightly. Place them on a baking sheet lined with parchment paper.
