- 300g (about 10.5 oz) zucchini, sliced (about 2 medium zucchinis)
- 2 tablespoons unsalted butter
- 1 tablespoon extra virgin olive oil
- 1 cup (240ml) low-sodium vegetable broth or water
- 1/2 cup (120ml) whole milk or unsweetened almond milk for a lighter version

- Prepare the vegetables: Peel and cube the Yukon Gold potatoes into about 2.5 cm pieces. Wash and slice the zucchinis. This step takes about 10 minutes. Ensure the potato pieces are uniform for even cooking.
